DIRECTIONS:
Place your oven rack on the lowest rack possible. Invest in a pizza steel vs pizza stone but both should suffice. Now crank your oven temp up to the highest setting.
1. In a small bowl, with a fork, stir yeast into warm water. Let stand until yeast is dissolved and you start to see little bubbles forming on top of the liquid, about 10 minutes.
2. In another bowl, mix cold water, sugar, and salt until dissovled; stir in oil.
3. Place 5 1/4 cups bread flour in your stand mized with dough hook. Stir the yeast mixture again with your fork to blend, then add all liquids to the floud. beat with dough hook on lowest speed until mixture comes together and is generally smooth--4 to 5 minutes.
4. Cover the mixture bowl with plastic wrap (or shower cap) and let rest for overnight.
5. Uncover the bowl and shape pizza dough into 14 oz balls. Let rest.
